Among the twenty types of steel used by the different manufacturers, of which the compositions are jealously guarded secrets, there are 2 main categories:

 Stainless steel :

Due to its bulk composition which, by its very nature, will not change with use, stainless steel is not liable to rust, and it always stays "cleaner" and "shinier" over time. It only requires occasional maintenance.

Carbon" steel" :

"Carbon steel" requires anti-corrosion coating at the end of the manufacturing process. This coating wears off with use, and it requires regular maintenance with oil to avoid oxidation.
